Simple keylogger program for Samsung Galaxy S5 g900v?

I'm about to just throw this phone out of my 8th floor office window, I'm not trying to spy on someone else's phone all I want is a program on MY phone that will record MY keystrokes. Failing that, a program that takes interval screenshots would work also. It seems that is impossible. Any apps I find that fit those descriptions require my phone to be rooted or require me to install the app on 2 phones (one to monitor and one to watch from). I have tried for the last 2 hours to root my phone and I am convinced it's just not possible. I've followed several online tutorials and youtube videos, tried root app downloads, everything and all says my galaxy s5 version is not rootable in some way or another at the end of the process.

All phone must be rootable on some level, right? Anyone have any input or ideas?
