What kind of data plan should I use?

I have a Samsung Galaxy Note Edge (version of the Note 4) unlocked gsm phone (currently running on AT&T's GoPhone, but I'm open to switching to other gsm-based carriers like T-Mobile and TracFone). I've been going data-less to save money, but now I can afford it.

I'd only use data for weather updates, Facebook messenger (sending maybe 5 messages a day), maybe searching addresses for an offline GPS, mms (1-2 a day), and searching businesses, restaurants, or the occasional how-to (most recent being how to change a flat tire on a VW Passat). I also occasionally (maybe once a week) post photos to Instagram.

I wouldn't use it for video or audio streaming, downloading apps, online GPS, Skype, or am online for long periods of time (I can use wifi for that). No Mobile HotSpot, either.

Any ideas?
